Balik uses its own water sources in the heart of Switzerland, of extraordinary purity and particularly rich in minerals. Even the wood used is local and needs to be dried for 10 years to obtain the perfect harmony between salmon, smoke and salt.
Balik is refined by our master smokers who put all their passion at the service of perfection. The very first smokehouse was built in 1978 with Israel Kaplan, the last holder of ancestral know-how.
