Prunier French caviar is at the heart of Yannick Alléno’s new menu.
Prunier Victor Hugo, an iconic destination for Parisian gastronomy, has a new chef, Yannick Alléno, and has given its Art Deco interior a facelift; an interior that is registered as an historical monument. The legend goes on!
The Maison Prunier is an icon of French gastronomy, and three-Michelin-starred chef Yannick Alléno is the new ambassador of the caviar house, with whom he shares a desire to develop a sustainable approach to gastronomy that respects the environment.
Prunier caviar, locally produced in France, in the responsible and respectful breeding of the Prunier Manufacture - a few miles from Saint-Emilion - is at the heart of the festive menu.
Prunier’s classic dishes have been reinterpreted into contemporary versions including the legendary Christian Dior egg, oysters with dill-infused almond milk, grilled lobster, fettucine with clams, salmon in a Chardonnay jelly, line-caught sea bass, and sole meunière. The dessert trolley is equally tempting, triggering wonderfully indulgent, treasured childhood memories.
Prunier take away...soon

The Prunier institution since 1924
Prunier Victor Hugo, the mythical art deco institution since 1924
Parisians have flocked there for decades, while travelers come from far and wide, excited by the stories they have heard. The Prunier restaurant on Paris’s Avenue Victor Hugo is classified as an historic monument and has just been revamped by interior designer Alexandra Saguet, along with Studios Gohard and L’Atelier du Mur.
These top-flight creatives have refreshed the moldings and Art Déco frescos, adding luxury fabrics designed by Pierre Frey. To complete the Izba salon designed for Pierre Bergé and Yves Saint Laurent, the upper floor now includes a new Caviar & Champagne bar offering the finest selection Paris has to offer. These hushed spaces for intimate lunches and dinners can be reserved for private events.
Eating caviar is always a delightful prospect, but this new makeover offers a lighter mood. Whether you’re looking to enjoy a delicious seafood lunch with the family, to sip champagne and sample fine caviar during a promising encounter, or simply to have dinner with friends alongside the fashionistas celebrating the start of Fashion Week.
This phoenix reborn from the ashes after 150 years is still and will always be a dazzling center for artistic souls, writers, young fashionables, and experienced globetrotters passing through the City of Light. And in 2022, this iconic Parisian gastronomic destination continues to write the legend with chef Yannick Alléno.
