What is Poutargue ?
Poutargue, boutargue or bottarga is a Mediterranean speciality made from salted and dried mullet roe, then coated in wax. This salting and drying process allows the bottarga to retain its beautiful texture and helps to preserve it, even once it has been opened.
The wax also blocks the maturing process so that the bottarga retains its unique, intensely iodised flavours.
