These Balik salmon fillets are produced in the heart of Switzerland , where Balik uses its own exceptionally pure and mineral-rich water sources.
The wood used for smoking is locally sourced and requires 10 years of drying to achieve the perfect harmony between the salmon, the smoke, and the salt .
Balik salmon fillets are finished by our Master Smokers , who dedicate their passion to perfection. The very first smokehouse was built in 1978 with Israel Kaplan, the last custodian of this ancestral know-how. The smoking process for these salmon fillets is based on the architectural style of the smokehouses of Great Russia .
The smokehouses are designed so that each salmon is continuously exposed to a fine and delicate smoke.
